- 6 oz. Ahi Tuna (Sushi Grade, if possible)
- 1/4 oz. Caribbean Jerk Seasoning
- 3 oz. mixed greens
- 2 oz. cooked and chilled Japanese Udon noodles
- 2 oz. Cabbage
- 2 oz. Toasted Sesame Dressing
- 1 oz. Cashews
- Broccoli crowns and sliced cucumbers to garnish
Preparation:
Toss mixed greens with Sesame Dressing and place in salad bowl. Top with the cabbage and then top with the Udon noodles. Drizzle some dressing over the noodles. Sprinkle cashews over the salad and garnish with broccoli and cucumbers.
Ahi Preparation:
Cut the Ahi into 3 strips and skewer. Dust with Caribbean Jerk Seasoning. In a sauté pan lightly coat with salad oil. When pan is hot place Ahi in pan with tongs and turn to cook to desired doneness. I suggest rare.
If you prefer something different than Ahi, seasoned chicken or steak are great substitutes.
