The vast majority of restaurants will be closed, but that doesn't mean all.  May I suggest, in Colorado Springs, that you book The Airplane Restaurant.  They do an extensive buffet featuring everything from salads, appetizers, variety of meats and seafood with the starches and vegetables, and a wide variety of desserts.  In Denver, India's Restaurant offers a buffet that is exceptional, and includes chicken, seafood, and lamb dishes.  Call each place for more details, and reservations are a must.
